
Cucumber & Mint Iron Water

A refreshing, iron-infused water perfect for hot days and post-workout hydration.

Serves: 4
Ingredients:
- 1 litre filtered water
- 1 Iron Egg
- 3 drops of fresh lemon juice
- 1 medium cucumber, washed and thinly sliced
- 10-15 fresh mint leaves, plus extra for garnish
- ½ lemon, thinly sliced
- Ice cubes, to serve
- Optional: 1 tablespoon honey or maple syrup for a touch of sweetness
Method:
STEP 1
Pour 500ml of the water into a medium saucepan and add the Iron Egg with 3 drops of lemon juice. Bring to a gentle simmer over medium heat.
STEP 2
Reduce heat to low and simmer for 5 minutes to allow iron to release from the Iron Egg.
STEP 3
Carefully remove the Iron Egg using a slotted spoon (caution: it will be very hot). Set the iron-infused water aside to cool completely.
STEP 4
While the iron water cools, prepare the cucumber and herbs. Slice the cucumber thinly (a mandoline is ideal if available). Gently bruise the mint leaves by clapping them between your hands to release their oils and aroma.
STEP 5
In a large glass jug or pitcher, combine the cooled iron-infused water with the remaining 500ml of fresh filtered water. Add the cucumber slices, mint leaves, and lemon slices. If using sweetener, add it now and stir until dissolved.
STEP 6
Refrigerate for at least 30 minutes (or up to 8 hours) to allow the flavours to develop.
STEP 7
Serve in glasses over ice, garnished with additional fresh mint leaves and making sure each glass gets some cucumber and lemon slices.
Tips:
- For a sparkling version, replace half the fresh water in step 5 with sparkling water just before serving.
- The vitamin C from the lemon helps your body absorb the iron more effectively.
- This refreshing drink provides approximately 1-2mg of iron per serving.
- The cucumber and mint infused water will keep in the refrigerator for up to 2 days.
- For variety, try adding a few slices of strawberry or a sprig of rosemary.
- This makes an excellent base for mocktails - just add a splash of elderflower cordial and extra sparkling water.
